Knife Maintenance

Taking proper care of your knife will ensure its longevity and performance. Follow these guidelines to keep your knife in top condition:

  • Cleaning: Always hand wash and thoroughly dry your knife immediately after use. Never put it in the dishwasher or leave it soaking in water, as this can cause damage and rust.

  • Protection: Apply a thin coat of food-grade oil or wax (such as Axe Wax, Boos Block, or Primal Wax) after use, especially if you won’t be using the knife for an extended period. Avoid using olive or vegetable oil, as they can go rancid over time.

  • Storage: You should store your knife in a dry place, and if it won’t be used for an extended period, take it out occasionally to check on it and ensure storage conditions haven’t changed. Applying oil or wax to the handle will help maintain its condition.

  • Cutting Surfaces: Always use wooden or plastic cutting boards. Avoid cutting on glass, ceramic, or granite, as these surfaces can dull and damage the blade because these materials are harder than steel.

High Carbon Steel & Damascus Knives

  • Over time, Damascus steel may lose its etched appearance due to exposure to acidic foods. This will not hurt the functionality of the knife.

  • High Carbon steel knives develop a natural patina, which is a darkening of the blade caused by contact with acidic foods like fruits and meats. This is a normal and protective process that helps prevent rust.

  • A patina acts as a protective layer, but the knife still needs regular care. Wipe the blade clean after use and keep it lightly oiled.

Stainless Steel Knives

  • Even stainless steels will rust to a certain extent if not properly cared for.

  • Rinse and dry your stainless steel knives immediately after each use to prevent staining or corrosion.

  • Use a soft cloth or sponge for cleaning; avoid abrasive pads that can scratch the blade.

  • Never put your knives in the dishwasher. Hand washing ensures they stay sharp and in good condition.

  • Store knives on a magnetic strip, in a wooden block, or in individual protective slots to prevent dulling or damage.
